Behind the scenes at the Manufacture

Dive into the manufacturing process of our limited edition Mother's Day Pépicœurs.

Each bonbon is an exquisite marriage of ganache or praliné with bold and sometimes original flavors. Discover a ganache inspired by Japan. Infused with Sakura leaves, the unavoidable Japanese cherry tree, it offers sweet and floral notes.

As for the praliné bonbons, they are made by mixing caramelized sugar with a base of roasted and crushed almonds or hazelnuts. This mixture is heated in a copper tank to create a perfect harmony of flavors. Then, it is finally crushed, giving way to a subtly flavored paste. A double texture is hidden in the hazelnut and wild strawberry bonbon: a fruit compote is associated with an infinitely comforting hazelnut praliné. The vanilla praliné is round and offers a delicious intensity.

All of our creations are handcrafted in Paris, from the cocoa bean to the chocolate bonbon.
