TASTE, PURE AND SIMPLE

We champion a radically distinctive macaron.

Here, every ingredient is a declaration of love to a terroir: almonds and pistachios from Sicily, hazelnuts from Lazio, lemons from Menton. The same hands that craft the macaron shells also assemble, bake, and fill these delicate creations.

The result: a delicious, well-balanced flavour and a soft, melt-in-the-mouth texture. But reducing sugar comes with greater demands. Sugar is one of the most powerful natural preservatives; by using less of it, our macarons become less crisp but more delicate.

We have chosen to offer them frozen,a classic technique that preserves this unique texture at the exact moment it is at its finest. A deliberate choice rooted in transparency and high standards, true to our vision: to preserve the essence of taste, the taste of what truly matters.

ESPRESSO COFFEE

Vibrant, topped with freshly roasted and ground coffee from the Coffee Workshop.

THREE VANILLAS

Made with a blend of three vanillas from the Ice Cream Workshop, offering bold and generous notes.

RASPBERRY & HIBISCUS

The pure, bright fruitiness of raspberry, lifted by a hint of hibiscus acidity.

HAZELNUT PRALINE

Hazelnuts from Lazio for a delicate, comforting flavor.

CHOCOLATE & NIBS

Made with cocoa nib praline from the Chocolate Workshop for an intense cocoa taste.

MARCELO MABILIA

Alain Ducasse entrusted the creation of his macarons to this pastry chef who, for nearly ten years, has already contributed to the opening of two of his restaurants as well as his Ice Cream Manufacture.

Marcelo began his culinary career with a few months’ internship at the InterContinental hotel in Rio. It was only later that he chose to become a pastry chef, when he joined the Quadrifoglio restaurant in Rio de Janeiro. Arriving in France in 2011, he briefly worked at the Maison Blanche restaurant before joining Fouquet’s. In the summer of 2016, he took part in the opening of Ore, Alain Ducasse’s restaurant at the Palace of Versailles, and then again in 2018 in the opening of Ducasse sur Seine as pastry sous-chef.

In 2020, Alain Ducasse invited him to join the team preparing the opening of the Ice Cream Manufacture. In March 2025, Alain Ducasse once again selected him to become Head of Production for Macaron Alain Ducasse.

DELIVERY & STORAGE OF MACARONS

Our macarons are delivered frozen to preserve their unique texture.

They are available for click & collect at a selection of boutiques, as well as by courier delivery within Paris.*

Tasting advice

To fully enjoy the richness of our macarons’ flavours, we recommend letting them defrost:

• 45 minutes at room temperature

• or 3.5 hours in the refrigerator, in their closed box

Storage advice

Macarons can be kept for 24 to 72 hours in the refrigerator (at 4°C), in their original box.

Do not refreeze.
