An irresistible treat, soft and gourmand, the Cookie Bar looks like a generous candy bar and tastes like a cookie. Le Biscuit Alain Ducasse revisits this modern pastry mainstay, taking inspiration from the Manufacture de Chocolat's Chocobar, which can be eaten on the street for a moment of sweetness, at any hour of the day. Relieved of any excess sugar or fat, these Cookie Bars have an intense flavor. The dough is made with a finely sifted flour to obtain the desired softness. To this is added candied oranges and hazelnuts for one, cocoa nibs and Peruvian chocolate ganache for another, and dates, apricots, figs, raisins and cranberries for a third. Two biscuits assembled with a filling and decorated with dried fruit or nibs for the crunch.
