If there was one childhood favorite of our chef Flora Davies, this would be it! In Canada, her homeland, peanuts are a pastry staple, and the Proust's madeleine of many gourmets... For this recipe, the peanuts are roasted and then blended to make homemade peanut butter. The beurre noisette in the cookie dough adds caramelized, roasted notes, while the roasted peanut inclusions add crunch and texture. Nothing is lost, everything is transformed: peanut praliné scraps from the Manufacture de Chocolat complete this exquisite composition.
