The flour mix includes potato and corn starch, as well as rice flour. Its composition allows for the preservation of a crumbly (but not too) and firm (but not hard) texture. The mixture of three vanillas selected for this recipe comes from the Manufacture de Glace. It adds an irresistible comforting and round flavor. Almonds, ground rather than powdered, allow for a more generous texture. This recipe’s technical challenge lies in obtaining a texture that is usually possible using wheat flour. La Manufacture de Biscuit has succeeded without wheat but with all the pleasure and flavor!
