Freshly topped biscuits

The Freshly Topped Biscuits represent the most pastry-like version of the shortbread biscuit and are a Manufacture exclusive. Each biscuit is garnished on demand, in front of the client. Three versions are offered: Lemon, Hazelnut and Chocolate. The Lemon version gets a lemon marmelade and a spread composed of lemon zest and flesh, and is sprinkled with grated zest and thin slices of candied lemon, resulting in clean yet delicate flavors. The Chocolate version is dressed in a ganache made from a Peruvian cru from La Manufacture de Chocolat Alain Ducasse, selected for its floral and aromatic notes. Finally, the Hazelnut version will delight praliné lovers with its whipped praliné coupled with a Piémont hazelnut paste giving a deliciously concentrated taste.
