Our Gelatiere creates a base of fior di latte ice cream with Jersey cow milk sourced from the Ferme de Haute Folie. This base is turbined before pouring in the melted chocolate (from the Manufacture de Chocolat Alain Ducasse) and fleur de sel. The melted chocolate hardens when it comes into contact with the cream and the turbine breaks it up into little chips, resulting in a gelato that is resolutely rich in texture and gourmand.
The ice creams are turbinated at La Manufacture La Glace Alain Ducasse, next to our Chocolaterie. It follows the same continuity: high quality ingredients and artisanal techniques for authentic tastes and a tasty experience.
