A forgotten recipe whose origins are unknown, this ice cream has been brought back to life by our gelatiere with citrus and almond syrup. Originally a cake which was then adapted to ice cream by an Italian artisan, the Glace Plombières appeared in the mid 19th century. The recipe was then further developed by the ice-cream-maker from Plombières-les-Bains in the Vosges region, who added fruits candied in kirsch. Our interpretation includes Corsican sun-ripened oranges, mandarins, grapefruit and pomelos which are then marinated in kirsch (an eau-de-vie obtained by fermenting whole cherries).
