Strawberry Sorbet Savory x Daring x Sparkling


The Gariguette strawberry, adored for its particularly aromatic fruit, is processed in juice and in jars in order to explore its entire flavor palette. This sorbet, created from a base of strawberry juice, is churned before whole, fermented strawberries are added for a sparkling texture. The fermented strawberries are jarred in advance with a salt and lime juice brine for 4 weeks.
