The Croc-Fin is all lightness and finesse with a delicious taste of almond and cocoa powder. The origins of this creation lie in Alain Ducasse's desire to offer an incredibly delicate biscuit. Visibly refined, it is cut very thinly and sprinkled with almond slivers.

The cocoa powder comes from the Manufacture de Chocolat and adds the roundness of chocolate to the taste while the almond adds to the crunchiness. The technical nature of this recipe resides in how the dough is worked. It is developed in three stages: first, it is mixed, then left to chill, then remixed in such a way that no air bubbles are left. This dough is then shaped into a roll, chilled then sliced before baking.
